
Caponata is a popular Sicilian dish.
Served as a complete meal or as a side dish.

Ingredients
- 700 g eggplant
- 300 g tomatoes
- 200 g celery (stalks)
- 200 g pepper
- 100 g olives or olives (pitted)
- 200 g onions
- 3 cloves of garlic
- 30 g capers
- 100 ml vinegar 6% (wine, apple)
- 1 tbsp Sahara
- salt
- pepper
- vegetable oil
- basil
Preparation
Finely chop the onion and garlic.
Cut the pepper into small pieces.
Cut the celery into small pieces.
Peel the tomatoes, chop finely.
Cut the eggplants into cubes.
Fry the onion and garlic in vegetable oil.
Add pepper.
Add celery.
Add tomatoes.
Add olives, capers.
Simmer for 10 minutes.
In a separate frying pan, in vegetable oil, fry the eggplant.
Salt a little.
Combine with tomato paste.
Simmer for 10 minutes.
Add sugar.
Add vinegar.
Salt if necessary.
Stir, remove from heat.
Sprinkle with chopped basil when serving.
